Flavours of Madagascar

Romazava — Flavours of Madagascar

Romazava

Meat and green-herb stew, Madagascar’s national Sunday dish.

Ravitoto — Flavours of Madagascar

Ravitoto

Crushed cassava leaves with pork, a legacy of the highlands.

Rhum arrangé — Flavours of Madagascar

Rhum arrangé

Rum infused with local fruit and spices; every family has its own recipe.

Madagascar has been separated from the rest of the world for 88 million years, and it shows on the plate as much as in its baobabs and lemurs: flavours unlike any African or Asian neighbour, yet carrying something of both. This is the cooking of an isolated island, stubbornly itself.
